- 1 1/4 cups (2 1/2 sticks) unsalted butter
- 2 1/2 cups granulated sugar
- 1 3/4 cups unsweetened cocoa powder
- 1/2 teaspoon kosher salt
- 1 teaspoon vanilla extract
- 4 eggs (cold)
- 1 cup all purpose flour
Instructions:
- Preheat the oven to 325 degrees F, and bring a wide skillet 3/4 full of water to a low simmer.
- Lightly grease an 8x8-inch, or 9x13-inch baking pan, and line with parchment.
- Place the first 4 ingredients in a large mixing bowl, and set the bowl in the simmering water.
- Allow the butter to melt and the mixture to become fairly hot, stirring every so often.
- Remove the bowl from the heat and allow the mixture to cool slightly.
- Stir in the vanilla.
- Add the eggs, one at a time, beating vigorously after each addition. The batter should begin to look smooth and glossy, and slightly pull away from the sides of the bowl.

- Bake for 45 minutes, or until a toothpick inserted in the center comes out with moist crumbs.
